WIAW #1!

I’ve been wanting to participate in Peas and Crayons’ What I Ate Wednesday for the longest time, so I’m happy to say that today marks my first contribution to WIAW. Check out Peas and Crayons for other bloggers participating! For those of you unaware of what WIAW is, it’s a fun way for fellow bloggers to share their latest favorites with others.

Today, my WIAW won’t include a full day of eats like many do. Since this is my first go, I decided to include a bunch of different food I’ve been eating lately. I find myself eating similar meals for breakfast and lunch, mostly because I know what I like. Someday, I’ll be adventurous and make different things for myself, but lately, this is what’s been working.

Breakfast

I’m a cereal person, no doubt. I’ll eat pretty much any type, but right now, I’m in Puffins mode. I love the Multigrain and Peanut Butter and Chocolate flavors. Sometimes, if there’s an almost-empty box of cereal, I’ll add it to my mix. I always add some sort of fruit like blueberries, and eat a banana on the side. I’ll use regular milk on occasion, but vanilla coconut milk is my jam.

I ALWAYS have a sweetened iced coffee with almond, coconut, or soymilk.

Lunch

Lunch is really where I try to switch it up. It stems from the basic salad or sandwich, but I’ll vary the toppings. Among my favorites are “garbage salads” using hummus as a topping, eggs in a basket, and sandwiches using the Laughing Cow cheese wedges.

Snacks

If I’m super hungry, I’ll grab a piece of fruit or a cup of Chobani. Since I’ve been in a coconut frenzy, I’ve been making a snack I found via CarrotsnCake. I slice a banana, add a scoop of Justin’s Chocolate Hazelnut butter, and a heaping tablespoon of sweetened coconut. I mash it up, and put it in a coffee cup. It looks a little funky,  but tastes great.

Some days, I need an afternoon pick-me-up in the form of coffee. My latest favorite find? Starbucks’ soy lattes.

Dinner

My sister and I love to experiment with new recipes for dinner. I made this recipe on Friday night, also found it via CarrotsnCake. I altered it a little, but it’s the same idea. I cooked up Whole Grain Farro, Cannelleni Beans, and Lemon-Garlic Marinated shrimp (sauteed shrimp in lemon juice, garlic powder, and salt and pepper). I added it all to the same pan, spooned it into a bowl, and ate the whole thing. I even had some leftovers to enjoy later.

I have a feeling as I begin training more, my meals will have to become way more carb-centered. I find myself craving tons of bread lately. Now I know why marathon runners go for huge spaghetti dinners the night before a race!
