So I didn’t really run a full marathon and not tell you…yet. I thought for today’s WIAW, I’d cover my eats from this past Monday. Mondays are rough for me – I have three classes back to back in the morning and a horribly scheduled 4 PM class. Luckily, I only have to do this one more time. YAY!

After another treadmill interval workout, (I was SUPER sore from yoga!). I came home, got all ready for the day, and made breakfast. While at Target this past weekend, I bought Cranberry Orange instant oatmeal. I zapped it in the microwave with 1/2 cup egg nog and 2 egg whites and topped it with blueberries and peanut butter.
SO good. If you haven’t tried egg nog in oatmeal, do it now. I pack ample snacks on Mondays. Snack #1 was a banana between class 1 and 2.
Snack #2 was a Larabar Uber bar, Cherry Cobbler flavored. This was so good. I almost like the Uber bars more than the regular bars. Almost.
Lunch should look familiar…I topped spring mix with raisins, a sliced Honeycrisp apple, a couple chopped figs, and two fried eggs.
I fried my eggs and seasoned them with cinnamon and sugar from my fancy grinder from TJs…so good.
I worked on some homework (kind of) until my next class. I packed up my crack-like trail mix from TJ’s… TJ’s trail mix > Target trail mix.
and put it in a gallon-sized Ziploc bag, since we ran out of sandwich bags. It was fun whipping out that bag in class.
Get ready for this…
Okay…here’s my favorite part of the day: dinner. I modified a recipe from Meg for Sweet Potato and Kale pizza.
I topped a whole wheat tortilla with a bit of mozzarella cheese, roasted sweet potato coins and spinach. Then, I mixed some almond butter and unsweetened almond milk as a pizza topping. My fellow sweet potato lovers know that the sweet potato/almond butter combination is to die for. Are you bored of seeing tortilla/Naan bread pizzas on here? Oh well, I’m gonna keep eating them.
Dessert was my usual dark chocolate Silk Milk and this…
times 2 0r 3. At least I got my protein in for the day! I’m off to class…next WIAW, I’ll be off to my last day of classes for the semester! WOOOO. Have a lovely day!
